# How to Make It:

01 - Lightly grease the inside of the slow cooker with olive oil or non-stick spray to prevent sticking.
02 - Arrange the halved potatoes along one side of the slow cooker and the green beans along the other. Place the chicken breasts in the center. Scatter the sliced onion and minced garlic evenly over all the ingredients.
03 - In a small bowl, combine the olive oil, dried thyme, paprika, dried rosemary, salt, and black pepper. Whisk in the chicken broth until well blended, then pour the mixture evenly over the contents in the slow cooker.
04 - Cover and cook on LOW for 5 to 6 hours or on HIGH for 2.5 to 3 hours, until the chicken reaches an internal temperature of 165°F and the potatoes are fork-tender.
05 - Taste the broth and adjust the salt and pepper as needed before serving.
06 - Serve hot, garnished with fresh chopped parsley and a squeeze of lemon juice if desired.

# Expert Suggestions:

01 -
  • It is genuinely a dump and go meal that tastes like you put in far more effort than you did, which is my favorite kind of cooking trick.
  • The potatoes soak up the herby broth and become almost buttery without any cream or butter involved.
02 -
  • Do not lift the lid during cooking to check on it because every time you do you lose about 30 minutes of heat and extend the cooking time significantly.
  • If your green beans are very thin they might overcook so add them in the last two hours instead of at the beginning for the best texture.
03 -
  • Brown the chicken in a skillet for three minutes per side before adding it to the slow cooker if you want a deeper richer flavor with almost no extra effort.
  • Make a double batch of the herb broth mixture and freeze half in a zip bag so next time you only have to dump the vegetables and chicken in and pour.
